As I write this newsletter, the landscape is magically turning white with a fresh dusting of snow. The ohhs and ahhs of the kids dreaming of making snowballs already has them excited in the early morning light, despite knowing we’ll barley have enough snow to cover our shoes at the days end. But it’s the excitement of the new season that gets us all a little giddy these days.

Most everything has been put to rest here at the farm. There’s the winter list of maintenance, organizing, and repairs that can stretch out over the course of the winter without too much franticness. A smaller list of daily to-dos is certainly appreciated and the vigor of outdoor activity is refreshing in its smaller doses that seem to get the blood flowing again.

There are several links to a variety of recipes to inspire the use of this week’s fall share. The newbie in the box is the beets. These beets were harvested in November and should have added sweetness, despite their more rugged irregular shape. The apple beet salad recipe above is a quick, raw salad to mix up the seasonal flavors of fall.

We are left with one delivery in the fall CSA season which will occur on Wed, Dec 14th. This is the last of the fall deliveries. For those of you that are signed up for the WINTER CSA, the first delivery will begin on Wed, Jan 11th. Delivery sites and times will remain the same. Most likely, the boxes will be covered with a blanket in the garages at the CSA drop-off sites to help modify the temperatures while the boxes await pick-up.

We still have 1# tubes of our pasture-raised beef available for anyone interested. 20# of burger fits within a half share box to give you an idea of how much freezer space this takes up. Our sale price is still $100 for the 20#.
