Here’s a picture of your tough women farmers this year, Heather and this season’s intern Vanessa.

Vanessa had the chance to hold down the fort this weekend and handle all the farm activity on Monday while Heather and her family went up north for a long fishing weekend. Vanessa arrived on the farm in late April from Colorado. She’s seen all the farm conditions of snow, rain, mud, sunshine, and a little more rain! Thankfully, Vanessa has lots of energy, enthusiasm, and passion for farming as she is on a mission to learn as much as she can about farming and all trades it encompasses so that she can start her own farm business in the future. The boys have adopted Vanessa as their wonderful big sister for the season and we are fortunate to share our lives with her until November.

This week brings a healthy box full of greenery and vitality! We have linked a few recipes next to the item names above as a way to suggest some additional ways to incorporate the greens into your menu this week, besides a salad. Pesto is a great way to use up the spinach this week. The pesto can sauce a chilled or warm pasta salad. The head lettuce is a little more crisp than the mixed salad greens and I thought about using it as a layer in a taco dip.

Next week, kohlrabi will be in the boxes.

Egg/Chicken Update:

8 new speckled Sussex chickens have been added to our flock of 28 birds. These juvenile birds will start to lay in the next month. 15 Rhode Island Reds that are currently laying have also been added to give us a grand total of 51 hens. The new girls were sourced from 2 different farms in the area. We hope once all the ladies have settled in their new home and have readjusted their pecking order that our egg shortage will be solved for the summer. This winter, our 50 baby chicks will also start laying so we will really be well stocked then.

Pizza Schedule this Week:

Open both Thursday and Friday evening, 4:30-9pm. Live Music Friday night by Reimer Revolution, 6-9pm. Farmer Heather’s 35th Birthday is on Friday! She’ll be cooking with her crown on 🙂
