Remember: Week 6: Even Week

What a lovely rain and beautiful week of weather! The boxes are getting even bigger…so our meals are getting even better. There is no lack of summer salads to keep food prep relatively easy during the hot days of summer. I love to make big bowls of salads, pasta, etc to keep in the fridge for quick feasting. The napa cabbage salad with toasted crunchies is a favorite here and uses up the big head of napa in an instant. The leftover salad does get soggy, so if you want to maintain the crunch, put the dressing over the cabbage and keep the crunchies on the side for topping individual servings at the table.

The fennel will be here for a couple weeks, so enjoy playing with this novel vegetable. We like its crunchy celery like texture and light anise flavor. The recipes above suggest ways to use it raw in a salad. Use the beet/orange salad recipe as inspiration to either follow as suggested or improvise with what you have on hand.

Herb Share this week:

  2. Basil, Purple Osage and Genovese
  3. Parsley
  4. Calendula Flowers (edible petals for color garnish)
  5. Thyme
