I’m still loving asparagus and I find that people pretty much have their favorite ways of using this fresh spring veggie. Our preference here is grilled or sauteed with garlic and butter. But I also add it to stir-fry and spaghetti sauce as well. I hope you are enjoying these morsels before the summer heat passes us onto other delights.

For those who love radishes, they are simple to add to a salad or sliced and eaten crisp on a sandwich. However, the heat of a radish is one I’m not personally fond of which in turn causes me to find all kinds of ways to use them cooked. I love them cooked! It tames down the heat, but you still enjoy their flavor. I stir-fried a bunch of veggies such as taters, onions, celery, carrots, radishes, spinach, garlic (whatever needed to be used up!) and then added a basic coconut curry sauce to it with some cubed up chicken. There’s a recipe above to guide you if needed, but let it be inspiration for what you end up with.

The spinach is a variety called Olympia and it lives up to its name by having Olympic sized leaves! I have planted this variety before but do not remember the leaves ever getting this big. We have to pick it with kid gloves and wash and bag it gently as the leaves can crack if handled roughly. However, I think they make great leaves for rolling up tuna salad in or as a bread replacement. Either enjoy there ginormous size or rip them up into smaller salad bites.
