The watercress was harvested from the headwaters of Yaeger Valley Creek. We’ve been eating one of these salads every night. My kids think it’s the best! Honestly, I’ve never been a big fan before but I think it is delicious right now. Either use your own vinaigrette or the recipe calling for a quick homemade vinaigrette is very easy and delicious.

This is the last of the spinach from inside the hoophouse. We’ll switch to harvesting from the field grown spinach next week. Yesterday, I worked in the hoophouse transforming it over to a “hot house” (which it certainly felt like) for the sweet peppers and early cucumbers. This switcheroo is a little later than usual, but I guess it’s been following the general slower spring weather schedule.

May 10 Hoophouse with Peppers & Cucs

I love seeing all the black landscape fabric covering the ground with peppers popping up everywhere. I know in just a short time it will transform into a small jungle, but with very minimal weeding!

Bok choy was grown in the greenhouse and is quite beautiful. I’ve found that this plant does well in planter containers which are actually under the growing table receiving partial sun. No flea beetle damage on it in there, or they just have not discovered this new place yet.

Yesterday was the first day I picked 6# of asparagus. However, everyone would have had received less than a 1/2# and that would have been more of a tease, so plan on it in the boxes for next week. UPDATE: Due to the warm night, I was able to pick another 10# this morning. Everyone gets a fresh bunch of asparagus. Yeah!

Here is one of our spring inspired meals. The teaser of roasted asparagus, watercress salad, and smothered chicken over couscous. The boys chowed down, but not without their awesome compliments of how pretty this meal looked. It seems to help their appetites when they help harvest their own supper ingredients!
