Tip for Freezing & Storing Herbs: Place clean leaves in ziplock bag, label, place in freezer, pull leaves out as needed and it’ll taste as close to a fresh herb as you can get in the middle of winter.

This week the tomatoes have come on in full throttle. Yesterdays harvest total for tomatoes was around 600#, and there was still another 2 rows left to harvest. Our hards were dyed green from all the picking. The almost 1″ of rain we received this last Saturday caused some major cracking issues on our slicing tomatoes, but we were still able to harvest a good selection of slicers, romas, and cherry tomatoes for the CSA members. When coming across lots of cracked tomatoes which could be thrown to the ground or fed to the chickens/pigs, I am glad that we have a means of processing these tomatoes into a variety of delicious soups, sauces, and salsas for the winter. It does take extra work, but I think it’s important to feed the people first and then give the scraps to the chickens. Needless to say, it’s going to be a busy roasting week to cook down all those tomatoes!
